One of our favorite home cooks – who also happens to be a Certified Culinary Professional (CCP) and awfully nice person in general – recently shared with us her favorite way to serve our Applewood Smoked Bacon-Wrapped Pork Filets. We thought you might like to recreate this meal idea from Ann Hall Every at home and that it might even inspire you to send us your own Nueske’s meal ideas and photos. Ann’s meal would be perfect for a Valentine’s Day dinner.
Ann suggests a white wine sauce be served over the bacon-wrapped pork loin and she adds sautéed shallots and parsley to her white wine sauce, as well. One of the sides she serves with this entrée is roasted/semi-“smashed” Yukon Gold potatoes with garlic, cracked black pepper, and a good olive oil. The other side item is tender, sautéed broccoli rabe, which is also known as broccoli raab or rapini.
In addition to the pork filet, we also offer a beef filet wrapped with our Applewood Smoked Bacon. Ann recommends a red wine sauce for the beef filet and we hope she’ll consider sending us a picture of her favorite sides for that dish, too.
If you’re really nervous about making your own sauces or reductions at home (although it sounds far more intimidating that it actually is), there are many places to order excellent quality frozen sauces. We love the stuff from Bonewerks Culinarte and a favorite of Ann’s is from More Than Gourmet. We’re sure you can think of many sauces and sides to serve with our tender, juicy bacon-wrapped beef or pork filets… or you can enjoy them straight from the grill or broiler, sans sauce.
