We were just told that today, February 25th, is National Clam Chowder Day. You might wonder why we bring this up. That’s simple: chowder is really, really good – but it’s even better with bacon. Here in Wittenberg, we generally don’t make it any other way.
You may not think of the Midwest when you think of chowder, but just think of all the contributions we’ve made to the Chowder Community as far as the ingredients we produce: corn, potatoes, cream, and… bacon.
In a good cup of clam chowder, as with any soup, there should be a little bite of something tasty in every spoonful. Bacon is a solid, savory background flavor for a good, creamy clam chowder. Our chowder has plenty of baby red potatoes and minced clams in each bite. Here’s our recipe for chowder with the addition of our Applewood Smoked Bacon. You could add corn, too; it provides nice color.
